El antipasto es un acompañante delicioso que está presente en nuestras comidas y fiestas venezolanas, es una herencia de antaño de europa que llegó a nuestras mesas y se hizo parte de nuestras tradiciones gastronómicas. Puede comerse solo, con pan, galletas y con lo que desees comerlo.

Además de vegetales puede ir acompañando con proteínas como: pollo, sardinas o atún, en este caso lo haremos con lo lomo de atún, reafirmando además que es una delicia fácil, deliciosa y económica de realizar
Antipasto is a delicious side dish that is present in our Venezuelan meals and parties, it is an inheritance from yesteryear from Europe that came to our tables and became part of our gastronomic traditions. It can be eaten alone, with bread, crackers and with whatever you want to eat it.

In addition to vegetables, it can be accompanied with proteins such as: chicken, sardines or tuna, in this case we will make it with tuna loin, also reaffirming that it is an easy, delicious and economical delight to make.

Ingredientes:

1 cebolla picada en juliana
1 taza tallo de ajo porro picado
1 taza cebollín picadito
½ pimentón rojo en juliana
½ berenjena en juliana
1 zanahoria en rodajas
½ repollo pequeño en juliana
4 tomates para salsa (procesado en licuadora)
1 cucharada mostaza (opcional)
3 cdas. Aceite (no de palma)
Sal y Pimienta al gusto
Ingredients:

1 onion, julienned
1 cup chopped leek stalk
1 cup chopped green onion
½ julienned red bell pepper
½ julienned eggplant
1 sliced carrot
½ julienned small cabbage
4 tomatoes for the sauce (processed in a blender)
1 tablespoon mustard (optional)
3 tablespoons oil (not palm oil)
Salt and pepper to taste

Preparación:

Calentar el aceite y colocar (previamente salpimentados al gusto) las cebollas, ajoporro, cebollín, el pimentón y la berenjena hasta blanquear. Reservar. En agua hirviendo colocar por unos minutos las zanahorias y el repollo. Sin que queden muy blandas. Colar y reservar. Luego colocar salsa de tomate después de cocinar los vegetales y agregamos moztaza, sal y pimienta al gusto
Preparation:

Heat the oil and add (previously seasoned with salt and pepper to taste) the onions, leeks, chives, bell pepper, and eggplant until white. Set aside. In boiling water, place the carrots and cabbage for a few minutes. Do not let them become too soft. Strain and set aside. Then, after cooking the vegetables, add tomato sauce and mustard, salt, and pepper to taste.

Agregamos la proteína, cocinamos, mezclamos bien, luego lo tapamos y dejamos a fuego bajo por 20 minutos aproximadamente, hasta los vegetales duros como la zanahoria se ablanden.

Se coloca caliente en un envase de vidrio previamente esterilizado en caliente para sellarlo de forma hermética con vidrio y tapa metal para que selle y al abrir haga el ruido característico de sellado (Ojo, no funciona con envases de plástico ni con tapas de plásticos), se espera que enfríe a tempratura ambiente y se refrigera.

Se come frío con galletas o pan tostado o a tu preferencia... Sirva además este manjar para mantenerlo refrigerado para mayor maceración de sabores y con buena técnica de conservación con el envasado hermético al calor puede preservarse hasta por más de un año en envase de vidrio y tapa metálica... Buen provecho
