In this post I will be sharing with you how I made a pot of delicious Nigerian jollof in my parent's house. Sometimes ago I shared with you on my blog that I went to my parent's house to drop off my son to enjoy his holidays with them, so in that short visit I made some meals for them and one of them is what I'm sharing with you today.
Jollof rice is like one of the most popular food in Nigeria and even when you are in the diaspora it is one of the things that is usually attributed to a Nigerian. This meal always steal the show at events, restaurants and even in the home. There are different ways of preparing jollof rice and it is one of them I will be sharing with you today.
Ingredients
5 scotch bonnet peppers
12 tomatoes
8 red bell peppers
2 onions
1 cup vegetable oil
6 seasoning cubes
1 sachet curry powder
1 sachet Ama wonder jollof rice spice
1 sachet chicken glory spice
1 sachet spicity stew and jollof spice
1 nutmeg seed
8 cups rice
Chicken stock
Salt to taste
Step by Step
Wash your scotch bonnet, tomatoes, bell pepper and onions, then blend it to your desired consistency either smoothly or almost smooth.
In a pot placed on medium heat add about 1 cup of vegetable oil, slice some onions and fry accordingly.
Next, pour in your bended pepper mix and let it fry on meduim heat for about 20 minutes and remember to stir at intervals to prevent burning.
Now, add your seasoning cubes, curry powder, chicken glory spice, spicity stew and jollof spice and ama wonder spice. Give it a good stir.
You may add some chicken stock and taste to check the salt and you may add more salt. Let it simmer for like 5 minutes before you scoop the one one you want to keep for other purposes.
Now, wash the rice and add it into your fried stew and gently combine together.
Next, add some water that will cook the rice and you may also add some chicken stock if needed.
Now, taste and add more seasoning or salt if needed.
Then cover the pot and allow to cook on medium heat. Ensure that you cover the pot with a lid that traps the steam effectively.
Be sure to check at interval to prevent burning and add some water when necessary.
Turn off the heat and allow the rice to simmer for about 10 minutes when you have checked that it is fully cooked. This will help it absorb more flavour.
Your jollof rice is ready to be served.
