Koro Bean Red Sour Soup

**Soupy dishes always have a lot of impressions for me, enjoyed while warm with a little touch of spicy savory makes it even more unforgettable. Enjoying food like this is heavenly for me, craving for a quiet day with a portion of delicious spicy soup.**


Hi foodie lovers, after the past 2 weeks I was so busy, a lot of heavy things of course made me stressed. But it was enough to revive me, the room with so many sounds, the smell of medicine, of course made my appetite less at that time. I know I also need more energy to stay strong, right? Ahh never mind he has rested peacefully, my previous post was enough for me to discuss something valuable for me to leave.

I think I need to enjoy a fresh dish this time, and it's very fortuitous that I have a lot of kacang koro at home. Kacang koro is a souvenir from my sister's mother-in-law, and it's my favorite bean. I love it and I think it can be made into anything. You can visit my blog where there are lots of recipes for these beans.

So here I will make a special dish like spicy soup from these beans.




Red Mung Bean Soup

Red Bean Soup is a very popular sour soup in my area, this soup is usually made from fresh vegetables and beans. However, today I made it with kavang koro, which as we know, koro beans have a savory and delicious taste. Curious about the recipe, let's see below.

Ingredients Needed

**200 grams of koro beans 1 tablespoon of red chili paste 1 clove of shallot 1 clove of garlic 1 stalk of chopped celery 1 stalk of chopped spring onion 1 tomato 2 bay leaves To taste shrimp paste 1 tablespoon of tamarind 1 tablespoon of sugar 1 lemongrass ½ teaspoon of salt ¼ teaspoon of mushroom stock**



Cooking Procedure

**Peel the inner skin of the koro beans, leaving only the beans so that it is easy to enjoy later.**

**Then boil the beans in enough water, then coarsely chop the tomatoes.**

**Add chili paste to the bean stew, garlic and shallots, blend with a little water until smooth, add spices that have been blended in a saucepan .**

**Then add lemongrass and bay leaves. Terasi and tamarind I dissolve with a little water, then add in the cooking pot**

**Then season with salt, sugar and also broth powder.**

**After everything is perfectly cooked, I add celery pieces and green onions then add tomato pieces, cook for a while until the ingredients wilt, turn off the stove and let it warm up then serve.**

Look at this, my koro soup bowl is finished, this dish can be enjoyed for 2 servings or even alone. And you can even enjoy it with other carbs like rice or bread. I prefer to combine it with warm rice or even enjoy it with fried chicken meat alone is very full.

The taste is very fresh, sour, slightly spicy, sweet and savory, the combination of all these flavors is very rich indeed. And certainly makes anyone who just tried it will definitely say it is very delicious.

Your Red Mung Bean Soap made my stomach scream. I am now looking for soup because we have a rainy weather here this afternoon and I think that kind of soup would best complement the day. Your procedure and ingredients are well-detailed and I love how concise you write. Kudos❤️
