Staff Meal Dinner: Japanese Curry Rice with Chicken Katsu & Tornado Egg

One of the last meals I cooked before heading off to a new work place. I made a comforting and hearty Japanese curry rice for staff dinner—complete with crispy chicken katsu and a soft, fluffy tornado egg. It’s one of those meals that feels like a warm hug after a long day, and it always hits the spot.

The base was a rich, mildly spiced Japanese curry made with onions, carrots, and potatoes simmered until tender and coated in that thick, velvety sauce. I fried up golden, crunchy chicken katsu— chicken breast cutlets that's juicy on the inside and perfectly crisp on the outside—and sliced it just before serving to keep that crunch intact.

To top it off, I added a tornado egg—a beautifully swirled, soft-set omelette with a creamy center that sat right on the hot rice. When you spoon into it, the egg gently falls apart, melting into the curry and bringing everything together. Those bites were the very best you wished there was more egg to go with every bite.

The plate looked just as good as it tasted, and the team devoured it quickly before heading into the evening rush. It was comforting, filling, and exactly what we needed to power through the night.
